Pinterest Recipe Challenge - Week 5

So for week 5 of my Pinterest Recipe Challenge 2015, I tried to make a soup in the crock pot.  I love soup and what an easier way to make dinner then in the crock pot?

This recipe was shared by my friend Heather and after trying hers, I wanted to make it myself.


The recipe goes as follows:

  • 3 Skinless, boneless chicken breasts
  • 32 oz Chicken Broth
  • 2 Cans of Rotel (I use original)
  • 2 Cans of Black Beans (drained)
  • 1 Can of Fresh Kernel Corn (drained)
  • 1 small onion
  • 1 tbsp Chili pepper
  • 1 tbsp Cumin
  • 1 tbsp Garlic Powder
  • Suggested Toppings: Tortilla Chip Strips, Mexican Blend Cheese, Sour Cream

I made my changes based on what we like as follows:

  • 6 chicken tenderloins - it's what I had on hand
  • 32 oz Chicken Broth
  • 1 Can of Corn - drained
  • 1/2 red onion
  • 1T Cumin
  • 1T Garlic Powder
  • 2 Cups White Rice
I made the recipe just as she did, but cooked the rice separately on the side and added it in 10 minutes before we ate.  I also took corn tortillas and cut them into strips.  I drizzled olive oil on them and put them in the over on a baking sheet at 350 degrees for about 10 minutes until they were nice and golden.

We loved this soup and it is definitely something we will be making again.  It made a ton and it is so filling.  Next time I make it, I will make homemade pinto beans to add in as well.  I can't wait!!! :)
